The Chablis from Domaine Verret initially surprises with notes of fresh bread crust. The naturally present iodized minerality is evident, but it is ultimately the citrus and very subtly and discreetly, the fresh almond that emerge. Over time, it gives way to buttery expressions of dried fruits and honey. On the palate, a fruity freshness prevails. However, if we speak of liveliness, it is never aggressive. The suppleness appears over time, opening up to a range of riper white-fleshed fruits.
Delicious on its own, the Chablis from Domaine Verret naturally pairs with a scallop carpaccio, an oyster dish, or even sushi, with sea urchin sushi mutually enhancing their iodized characters. Older and thus more supple and ample, it will perfectly complement cheese, whether it's Comté or aged goat cheese.
